In late February or early March, it's time to get ready for Maple Syrup!!

Then the spial is driven in!
First the tree is drilled!
Drop by drop the sap is collected in the buckets that are hung on the trees. It takes alot of drops...FORTY gallons of drops to make just one gallon of delicious pure Maple Syrup!
Each day the sap 'runs' the 450 buckets, which are hung over 15 acres are emptied.
The sap is then brought back to the SUGAR HOUSE to be cooked!!
Changing sap to syrup is an art..it's an event to behold!!!
For best taste we cook over a wood fire!!
Then it's checked!!!
Until it's just the right color, temperature,and taste to be the best syrup your Waffles ever wore!!!
